Taiwanese Black Sugar Boba Milk Tea

Ingredients


Milk tea 1.5 litres milk 20g loose black tea leaves, or 4 tea bags 50g light brown sugar or black sugar Ice cubes


Black Sugar Tapioca Pearls 65ml water 45g black sugar 110g tapioca starch, plus more for dusting


Syrup 240ml water ½ cup black sugar


Making Black Sugar Tapioca Pearls

  1. Sift the tapioca starch into a blow

  2. Pour the water and sugar into a small pot or saucepan, and bring it to a boil.

  3. Stir and make sure all the sugar has melted, turn down the heat to low

  4. Pour the tapioca starch into the pot and use a spatula and stir until mixture is well mixed, forming a dough

  5. Cooking the dough over low heat for 3-5 mins while continually mixing the mixture to avoid burning

  6. Scrape the dough out onto a clean work surface, and split it into two or three roughly equal portions. If the dough is sticky, knead in a tablespoon or two of fresh tapioca starch into the mixture.

  7. Take one of the dough portions, and cover the rest with a cloth or kitchen towel

  8. Roll out the piece into a long string, roughly 0.5cm or 1 cm thick depending on your preference of the size of the boba.

  9. Cut the string of dough into little pieces, using your palms roll the small piece of dough into little spherical balls. Dust the boba with some additional Tapioca starch. Repeat until you’ve rolled out all the dough.

  10. Place water into a large pot, and bring to the boil.

  11. Add the Tapioca pearls (Boba) into the water and boil for approximately 20mins, until the pearls are cooked through. Stir the pearls as it cooks to avoid sticking.

  12. Once the pearls float and are translucent it is ready, transfer to an ice bath to cool.

  13. Prepare the Syrup

Making Syrup

  1. Add 240ml water to a small pot and ½ cup black sugar

  2. Bring to the boil and then add the pearls into a syrup

  3. Let it slow simmer for 10-15 mins, this will allow the pearls to absorb the syrup

  4. Cook the syrup until its thick

  5. Keep warm while you prepare the tea

Making the milk tea

  1. Heat up 1.5 litres milk and sugar to a pot, until the milk is heated through. Then take off the heat

  2. Add 20g loose black tea leaves in a tea holder, or 4 tea bags let it seep

  3. You can refrigerate to drink cold or serve warm





Putting it all together for black bubble tea

1. Get a serving glass or cup and title it slightly and placed the Tapioca peal syrup into the top of the glass, let it slide down creating a ring around the inside of the glass/cup, should look like tiger stripes

2. To serve cold: Add ice cubes into the glass, then pour the milk tea into the glass

3. To serve warm: Add the warm milk tea into the glass/cup
