Classic English Scones

Quick and Easy to make, moist, light and fluffy!


These scones are the softest, lightest and fluffiest, moist and flavourful, and remember when you make this recipe, light hands make a light scone!

INGREDIENTS

  • 350g self-raising flour ( 2 cups and 13 tablespoons)

  • 1/4 tsp Salt

  • 1 tsp baking powder

  • 3 tbsp caster or regular sugar

  • 3 oz or 85 g butter, cubed

  • 3/4 cup or 175 ml milk

  • 1 tsp vanilla extract

  • A squeeze lemon juice

  • beaten egg, to glaze

  • 1 cup or 200 g raisins, dried fruit etc of your choice


Method


Preheat the oven to 200°C.

  1. Strive self-rising flour into a mixing bowl and crumble cubes of butter through the flour. Using your finger tips combine until it turns into a fine breadcrumb.

  2. Mix sugar and milk into the mixture lightly, forming a rough ball with the dough, make sure the surface is smooth

  3. Place the dough onto a lightly floured surface, and roll out the dough to approximately 1.5 – 2 cm tick

  4. Using a pastry cutter (6 cm) or a cup to cut out circles

  5. Gather up the scraps of doughs and knead briefly and roll again and cut into circles

  6. Place the scones onto a baking sheet and using a brush, dip into milk and wash the top of the Sones

  7. Place the scones into the oven and bake for approximately 10-12 Minutes, until they have risen and golden brown

  8. Once baked, transfer to a cooling rack for a few mins before serving warm or cold

  9. Server with butter, strawberry jam and whipped cream


Tips:

· For extra shine to the scones, after brushing a light milk wash, sprinkle with caster sugar.

· For a high glaze, brush the top of the scones with a egg wash
